Arugula, Green, and White Bean Salad
This Arugula, Green, and White Bean Salad is a delightful combination of fresh greens, creamy white beans, and tangy feta cheese. Tossed in a simple balsamic vinaigrette, it's a perfect side dish or a light meal on its own.
Ingredients:
- 2 cups arugula leaves
- 1 cup mixed green lettuce
- 1 can 15 oz white beans, drained and rinsed
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
Put arugula and mixed green lettuce in a large salad bowl and mix them together
Put in the white beans that have been rinsed and drained, along with the cherry tomatoes and sliced red onion
Add some broken up feta cheese on top
Olive oil and balsamic vinegar should be mixed together in a small bowl using a whisk
This will make the dressing
Put the dressing on top of the salad
Add pepper and salt to taste
Gently toss the salad to mix all the ingredients together
Serve right away as a healthy and refreshing salad
