Greek Shrimp with Tomatoes and Feta
This Greek-style dish has tangy feta cheese on top of juicy shrimp cooked with tomatoes, bell peppers, and fragrant herbs. This seafood recipe tastes great and fills you up. It goes well with crusty bread or rice.
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 can 14 oz diced tomatoes
- 1 tsp dried oregano
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Warm up the olive oil in a big pan over medium-low heat
Add the chopped onion and garlic and cook until the onion and garlic smell good
Put in the sliced red bell pepper and cook it until it gets soft
Add the dried oregano and diced tomatoes and stir them in
Let it cook for 5 minutes
It will take about 34 minutes of cooking after adding the shrimp until they turn pink and opaque
Add pepper and salt to taste
Add crumbled feta cheese on top of the shrimp and tomato mix
Before serving, sprinkle with fresh parsley
