Spicy Vegan Grilled Cheese Bites
Ingredients:
- 1 block extra-firm tofu, pressed and sliced into thin squares
- 1/4 cup soy sauce
- 2 tablespoons sriracha sauce
- 1 tablespoon maple syrup
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 cup vegan cheese, shredded
- 8 slices whole grain bread
- 2 tablespoons vegan butter, softened
- 1 tablespoon chopped fresh cilantro optional, for garnish
Instructions:
Soy sauce, sriracha sauce, maple syrup, garlic powder, and smoked paprika should all be mixed together in a shallow dish to make a marinade
Make sure the tofu slices are well covered when you add them to the marinade
For at least 30 minutes, let it sit
Warm up the grill or grill pan over medium-low heat
Spiced tofu slices should be grilled for three to four minutes on each side, or until grill marks appear
Melt some vegan butter and put it on one side of each piece of bread
Grilled tofu slices and vegan cheese shreds should be put between two buttered slices of bread
Toast the bread and melt the cheese on both sides of the sandwich for three to four minutes on each side
Cut the sandwiches into small pieces after they're done cooking
If you want, you can add chopped cilantro as a garnish
Enjoy while hot!
