Quinoa Veggie Stir Fry
A nutritious and flavorful vegan stir fry packed with colorful vegetables and protein-rich quinoa, seasoned with a savory soy sauce mixture.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup snap peas
- 1 cup mushrooms, sliced
- 1 tablespoon cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- Sesame seeds for garnish
- Green onions for garnish
Instructions:
In a saucepan, bring vegetable broth to a boil
Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed
In a small bowl, mix soy sauce, sesame oil, cornstarch, and water
Set aside
In a large skillet, heat some oil over medium heat
Add onion and garlic, saut until fragrant
Add bell pepper, broccoli, carrots, snap peas, and mushrooms to the skillet
Cook until vegetables are tender but still crisp
Pour the soy sauce mixture over the vegetables in the skillet
Stir well to combine and cook for a few more minutes until the sauce thickens
Season with salt and pepper to taste
Serve the stir fry over cooked quinoa
Garnish with sesame seeds and chopped green onions before serving
